Chickpea Crusted Golden Potato Balls

These crispy potato balls are the kind of recipe that disappear the second they hit the table. Crunchy on the outside, fluffy and savory on the inside, with a molten mozzarella center, they’re comfort food done right.
The base starts with simple mashed potatoes, seasoned generously so every bite has flavor. Cornstarch helps bind everything together and gives the potatoes structure so they hold their shape while baking.
